What We Eat In A Week - Episode 020
This week's highlights were vegan sushi from NoW Sushi in San Diego, Louisiana Chikun pasta and Fettucine Alfredo from Veegme, and a tasty bagel / Just Egg breakfast combo, and more!

This week is full of a few of our favorite simple meals, our food adventures while visiting San Diego a couple of times, our first time trying Veegme (a local vegan business in Temecula), and more!

Thursday, April 29th
Breakfast - Just Egg Scramble + Shiitake Mushrooms + Rice & Avocado
First I put some rice into the rice cooker along with sea salt, pepper, and vegetable bouillon. Next, I sauteed shiitake mushrooms along with sea salt, pepper, and garlic powder. Once the mushrooms were cooked, I set them aside and cooked Just Egg in the same pan. I tossed the mushrooms back into the pan once the “eggs” reached the scramble consistency. I plated the scramble over a bed of rice and topped it off with chili oil, sesame oil, seaweed, and a side of avocado. I didn’t add chili flakes to my plate like I usually do because my dentist told me to avoid chili for a few days. This is one of our favorite breakfasts — it’s so good and filling!

Lunch - Leftover Sopa de Fideo + Tortillas
I heated up leftover Sopa de Fideo and some tortillas to have with it!

Dessert - Jolly Llama Caramel Chocolate Chip Cone
Jolly Llama’s vegan ice cream cones are truly top-tier.

Dinner - Smoothie
We were still pretty full when dinnertime rolled around. It was too hot to cook anything so I made us some smoothies using Costco’s “Fresh Start Smoothie Blend” which has blueberries, strawberries, raspberries, kale, and spinach. I added moringa powder and Earthly Choice’s Espresso Maca Mulberry Powder. For the liquid, I used Suja’s Citrus Immunity juice. This was perfectly refreshing!

Friday, April 30th
Breakfast - Just Egg Scramble + Shiitake Mushrooms + Rice & Avocado
I made this the same way as the day before!

Lunch - Vintage Vegan Diner Sliders + Lemon Pepper Tofu Bites
The frozen meals from Vintage Vegan Diner are truly the BEST! If you’re in NV or CA we can’t recommend their food enough it’s affordable and scrumptious. I microwaved their sliders and cooked the lemon pepper bites on the stovetop.

Dinner - Vegan Pizza from Angelos Brick Oven Pizzeria
It was pretty hot this day and we had been cleaning all day so we decided to pick up pizza for dinner. We ordered the 2008 pizza with vegan cheese and we added jalapeños and garlic to it. This restaurant was the first place to offer vegan pizza options in this area — and they import their dough and pasta from Italy which explains why we love their pizza so much!

Snack - Mango Outshine Bar + Nodoh Jalapeño Style Sticks
We wanted a snack after we painted our place so we had an Outshine bar. I also air-fried some jalapeño mozzarella style sticks to dip with marinara sauce.

Saturday, May 1st
Breakfast - Everything Bagel with Just Egg & Tomato
First I cooked Just Egg like an omelette in a small pan. Then I toasted a Daves Bread everything bagel and spread Miyoko’s Creamery Double Cream Classic Chive Cheese over the top and sliced tomato. Lastly, I stacked it all together. This was so great we made it again on Sunday!

Lunch - Vegan Chick’n Fajita Burrito + Guacamole from Tocaya Organica
We were going to the beach in San Diego and of course, stopped to pick up Tocaya Organica while we were there! We ordered our usual chick’n fajita burrito (I had mine without beans… IBS problems) and a side of guacamole which comes with plantain chips. We can never get tired of this combo it’s amazing!

Pick Me Up - Juice from Joe & The Juice
After we left the beach we picked up juice from our favorite juice place. We ordered the following juices: Go Away Doc and Green Sport. They also have sugarcane straws which we’d never seen before they started carrying them.

Dinner - Vegan Sushi from The Yasai By RakiRaki
We picked up sushi for dinner. We ordered the following rolls: Stressed Out, Neon Gravestones, The Believer, and Hanzo Sword. I think that they named a few rolls after Twenty One Pilots songs (I noticed this the last time we went too). The “stressed out” roll is our favorite next time we’ll only get that roll and their ramen because their ramen is incredible!


Dessert - Loving Earth Raspberry Chocolate Bar
My mom got us a couple of chocolate bars from Grocery Outlet this was one of them. The chocolate was okay, it wasn’t as rich as we prefer our chocolate to be. That’s why we wouldn’t get it again but we will finish it, maybe I’ll bake something with it.

Sunday, May 2nd
Breakfast - Everything Bagel with Just Egg & Tomato
I made another breakfast bagel sandwich the same way as Saturday!

Lunch - Beyond Sausage + Samosas + Potatoes
I went over to my parent’s house for a quick visit and my mom had made beyond sausages for lunch and sent me home with a couple. I heated up the beyond sausages and microwaved a few potatoes, and air fried Trader Joe’s Mini Vegetable Samosas. Once everything was done heating up I plated it all and topped the potatoes with Miyokos Creamery European Style Cultured Vegan Butter, vegan parmesan from Tijuana, salt, and pepper. I had my beyond sausage on bread with Follow Your Heart Veganaise and sriracha. This was a very random lunch but it worked.

Dinner - Caesar Salad
First I added spring mix into our bowls. Then I topped the greens with diced tomatoes, avocado, and garbanzo beans. Lastly, I drizzled Trader Joe’s Vegan Caesar Dressing over top. This is my go-to simple salad this week.

Dessert - Trader Joe’s Cheese-less “Cheesecakes” topped w/ strawberry jam
We had Trader Joes Vegan “cheesecakes” for dessert. I topped them with strawberry jam for some pizzazz (thank you to the Trader Joe’s cashier for this suggestion)!

Monday, May 3rd
Breakfast - “Huevos” con Chorizo de Soya & Flour Tortillas + Smoothie
First I made a smoothie to drink while I cooked breakfast (same one from Thursday). Then I cooked Just Egg into a scramble in a medium pan. In a separate small pan, I cooked Cacique’s Soy Chorizo. Once the chorizo was almost fully cooked I added it into the Just Egg scramble and let it all cook together. Lastly, I heated up some flour tortillas my mom got us from Tijuana and cut up some avocado for a side. This was great and very filling!

Lunch - Vegan Louisiana Chikun Pasta + Fettucine Alfredo from Veegme
We picked up food from Veegme — a small local vegan business in Temecula. Everything was so flavorful we couldn’t believe it! We cant wait to order again and again! Go support chef Alan give him a follow on IG @Veeg_Me you can DM him to order. :) Also huge thank you to him for kindly giving us a sample of his vegan BBQ ribs which were also mindblowing!


Dinner - Fettuccine Alfredo from Veegme
We ate the Louisana Chikun pasta for lunch and had the Fettucine Alfredo for dinner!

Tuesday, May 4th
Breakfast - Dunkin Beyond Breakfast Sandwich
We had the most chaotic morning, to say the least. I coudnt’t even think about cooking so we picked up Dunkin’ for breakfast before heading out to the beach with my family for my brother’s birthday. To veganize Dunkin’s Beyond Breakfast Sandwich omit the egg and cheese. We like to stack hashbrowns in our sandwich along with Green Pepper Cholula Sauce. For pictures check out Episode 9!
Snack - Veggie Sandwich w/ Tofurkey Deli Slices & Lucas Mango Ice Cream Bar
My mom packed us some vegan sandwiches to have as a snack. I ate half because I was so hungry from exploring Sunset Cliffs (I forgot to take pics). She used toasted Sara Lee Artesano bread, Tofurky Peppered Deli Slices, sliced fresh jalapeños, tomato, and avocado for the sandwiches. An ice cream truck also pulled up where we were so we got Lucas Mango Bars which I have been craving for YEARS but haven’t been able to find so I was very happy!

Lunch - Vegan Sushi from NoW Sushi
We had sushi from this all-vegan Japanese Cuisine restaurant in San Diego for lunch. We ordered the following rolls: No Worries, Sunny Fire, and the Marilyn. Everything was exquisite and we can’t wait to come back!

Dinner - Vegetable Pho from Palm Thai Cuisine
We picked up Thai food for my brother’s birthday dinner. This is our favorite Thai place and has now become my family’s favorite too! We ordered 2 vegetable Phos without broccoli (IBS problems again). It was all delicious as always!

Dessert - Homemade Strawberry Cake
I made my brother his birthday cake. He mentioned wanting strawberry cake a while ago so I did some late-night baking the night before to make it happen. The cake was wonderful! My hand mixer broke as I was making the frosting which is why it’s not too fluffy but that’s okay. I’ll be adding this cake to my list of go-to’s. Here’s the link to the recipe! It’s supposed to be 3 layers but I made 2. :)

Wednesday, May 5th
Breakfast - Leftover Strawberry Cake
We couldn’t think of anything other than the cake so we had cake for breakfast.
Lunch - Leftover Sopa de Fideo w/ Takis Wave Chips
I heated up the last of the Sopa de Fideo for lunch. For pictures scroll to Thursday or check out episode 19 for more details. We had it with some new chips we found at Walmart. These chips are definitely a new fav!

Snack - Cajun Fries from Five Guys
We were very hungry after our workout so we picked up our all-time favorite fries to have as a snack. (I forgot to take pictures because we ate them so fast).
Dinner - Caesar Salad
I made the same Caesar Salad from Sunday again, it’s good and simple!
