Welcome back to our vegan newsletter showcasing what we eat in a week! If you’re new and want to learn more about us and why we started this series, read our About Section :)

Note: We decided to publish new episodes every Friday instead of Thursday to give me a little more room to write!

This week was a very busy week for us and also a hard mental health week for me so there are more quick meal ideas like frozen meals, quick salads, takeout, etc.

At the beginning of this week I made vegan horchata cheesecake with a churro style crust topped with vegan Cajeta and my favorite comfort soup Sopa de Fideo!

Towards the end of the week I made vegan pupusas and we made the drive out to San Diego to get tacos from Vegan Urbano and MANEATINGPLANT (vegan Asian fusion food)!

We also tried Target’s Non-Dairy Vanilla Cake & Cookie Dough Frozen Dessert and Lay’s Funyuns Onion Flavored Wavy Chips!

Thursday, August 19th

Breakfast - Dunkin’ Beyond Breakfast Sandwich

We picked up breakfast from Dunkin’ this morning again because I didn’t have time to make breakfast. To veganize Dunkin’s Beyond Breakfast Sandwich omit the egg and cheese. We like to stack hashbrowns into our sandwiches and add Green Pepper Cholula too! For pictures check out Episode 9!

Pick Me Up - Sol-ti Strawberry Lemon SuperAde

Brianna kindly gifted us some Sol-ti drinks and we shared one on our drive back home!

Lunch - Potatoes made by PLVNTFOOD + fruit

Brianna made breakfast potatoes this morning and gifted me the rest of them. We ate the potatoes in the car and they were SO AMAZING!!!

Dessert - Vegan Horchata Cheesecake with churro style crust, topped with Vegan Cajeta

I made a cheesecake the day before and let it sit overnight. Once we got home I ran to cut us a slice to see what it turned out like. A few days ago, I had an idea to make a vegan horchata cheesecake with a churro-style crust, topped with vegan cajeta. I made everything aside from the cajeta from scratch. This is the link for the vegan cajeta! I’m working on perfecting this because it still doesn’t taste exactly how I want it too but it was a great first try nonetheless!

Snack - Frozen Mango topped with liquid Tajin + regular Tajin

I snacked on some frozen mango and I topped it with liquid Tajin and regular Tajin.

Dinner - Leftover Vegetable Biryani + Mini Vegetable Samosas

I heated up the leftover vegetable biryani we made the day before! Here’s the link to the last episode for the details. I also air-fried Trader Joe’s Mini Vegetable Samosas for a side. We had tamarind sauce to dip the samosas in on our plate too.


Friday, August 20th

Breakfast - Panera Bread You Pick Two, Ten Vegetable Soup + Mediterranean Veggie Sandwich

We picked up Panera for breakfast because I wasn’t feeling good this morning and couldn’t make breakfast. We ordered their “you pick two” and got their ten vegetable soup which is vegan friendly, and their Mediterranean veggie sandwich which you can veganize by asking for no feta and opting for one of their vegan-friendly breads (we get their Black Pepper Focaccia).

Lunch - Sopa De Fideo

All day all I could think of having was a warm bowl of Sopa de Fideo so I made some! I added cooked red and green lentils, potatoes, and diced yellow bell pepper to the Sopa to make it more filling. This is my absolute favorite comfort meal!

Dinner - Trader Joes Vegan Tikka Masala

We heated up Vegan Tikka Masala from Trader Joe’s for a quick lunch. It’s convenient to have frozen meals on hand and Trader Joe’s Vegan Tikka Masala is so tasty!


Saturday, August 21st

Breakfast - Leftover Sopa De Fideo + Quesadillas

We had to eat breakfast quickly because we were going to my friend’s birthday celebration this morning. I heated up leftover Sopa de Fideo. While that was heating up, I made quesadillas on the comal using Mission flour tortillas and Good Planet Foods Mozzarella Shreds.

Lunch - Basil Fried Rice w/ fried tofu from Palm Thai Cuisine

For lunch, we split spring rolls, and Spicy Basil Fried Rice from our favorite Thai restaurant — Palm Thai Cuisine! My friends also loved their food too! We also ordered Panang Curry with fried tofu to go so we could have it the next day. :)

Dessert - Vegan Horchata Cheesecake with churro style crust, topped with Vegan Cajeta

When we got home we each had another slice of the Horchata Cheesecake with churro-style crust, topped with Vegan Cajeta I made. This is a picture of it uncut. :)

Dinner - Snapdragon Vietnamese Pho

We heated up Snapdragon Vietnamese Pho bowls for a quick lunch. We found these at business Costco — they’re good, vegan-friendly, tasty, and convenient.


Sunday, August 22nd

Breakfast - Leftover Sopa De Fideo

I heated up the last of the leftover Sopa De Fideo for breakfast!

Snack - Dragonfruit from my parents garden + chips & guacamole

I went to visit my family and snacked on a dragonfruit from my parents’ garden and guacamole and chips. Fahim snacked on some Pringles.

Lunch - Panang Curry w/ fried tofu from Palm Thai Cuisine

We heated up Panang Curry from Palm Thai Cuisine. This is our favorite dish — it’s traditionally made with coconut milk and we ask for fried tofu as our protein!

Dinner - Taylor Farms Asian Chopped Kit

I quickly prepared Taylor Farms Asian Chopped Kit Salad and packed it to-go with us so we could have a picnic dinner at the park. This is our new favorite pre-made salad! I love that they’re coming out with more vegan-friendly salad kits because they truly come in handy.

Dessert - Non-Dairy Vanilla Cake & Cookie Dough Frozen Dessert from Favorite Day

We are OBSESSED with Favorite Day’s Non-Dairy Vanilla Cake & Cookie Dough Frozen Dessert!!! This vegan ice cream is better than ALL the vegan ice creams. We’ve never had ice cream this good! This flavor is our favorite along with their Non-Dairy Caramel Fudge Brownie Frozen Dessert. Next time you’re at Target pick up these flavors, trust me!


Monday, August 23rd

Breakfast - Just Egg + Rice + Avocado

First, I cooked Just Egg into a scramble. Next, I heated up rice then put the Just Egg scramble over top. For toppings, I drizzled sesame oil, chili oil, and topped off our plates with sliced avocado, and red pepper flakes. This is our favorite go-to filling breakfast!

Snack - Miss Jones Baking Co Sea Salt Chocolate Chip Cookies

We found Miss Jones Baking Co Sea Salt Chocolate Chip Cookie Mix at Costco — the mix itself is vegan friendly and you can make the ingredients to add in vegan. I added in Just Egg instead of actual egg and softened vegan butter. After I made them I noticed that the box also has vegan ingredient suggestions of 1/4 cup of vegan butter and 1 flax egg. These cookies were so yummy!

Lunch - Nongshim So Veggie Ramen Noodle Cup

We weren’t too hungry since we had a big breakfast and were snacking on cookies while we cleaned. We decided to have a light lunch and heated up Nongshim So Veggie Ramen Noodle Cups.

Dinner - Impossible Whopper from Burger King + Fries + Coke Slushie

We were very hungry after our workout and wanted to eat something quick so we stopped by Burger King. We ordered 2 Impossible Whoppers with no cheese and no sauce, 1 fry, and 1 frozen coke/slushie.

I always add BBQ sauce to my burger along with fries. It’s still so mindblowing to me that if you’re ever in need of a quick bite you can get a vegan burger from Burger King!


Tuesday, August 24th

Breakfast - Just Egg + Rice + Avocado

I made the same breakfast the same way as Monday because we can’t get enough of this combo! This morning I heated up leftover rice instead of making fresh rice.

Lunch - Amy’s Sweet & Sour Bowls

I was still in the middle of cooking pupusas and we were going to eat at a couple of places later in the day so we had a light lunch. We heated up Amy’s Sweet & Sour Bowls — Fahim picked the broccoli out of my bowl for me (because of my IBS). These come in handy for quick meals! We found these at Grocery Outlet.

Snack - Homemade Pupusas topped with curtido + salsa

I made pupusas stuffed with Cacique Soy Chorizo and Mozzarella made by Brianna! Before I made the pupusas I made curtido, which is pickled cabbage, onion, and jalapeño from our garden. I used this recipe for the curtido. I used red cabbage instead of green cabbage.

We split one pupusa and topped it with curtido and homemade salsa I made the other day — here’s the link for the recipe video I have up! This was too delicous!

Dinner - Fried Shroom Bao & Cantonese Curry Puff from MANEATINGPLANT + Tacos from Vegan Urbano

The first dinner stop while we were in San Diego was MANEATINGPLANT! We ordered 2 of their Fried Shroom Bao’s, 1 Cantonese Curry Puff, and 1 order of Garlic Noodles. MANEATINGPLANT is truly phenomenal!!! This was our first time trying their Cantonese Curry Puff and we were big fans! As always, the Bao was perfection and we saved the garlic noodles for the next day. If you ever get the chance, check out MANEATINGPLANT, their food is next level!

Our next mandatory food stop and the reason why we drove out for dinner was for Vegan Urbano’s tacos. If you missed the episode where we first talked about it, here’s the link. We’re STILL in disbelief, their tacos are SO flavorful and juicy!

We ordered 6 serpentine tacos (I ordered mine without beans becasue of my IBS). Let’s also take a moment for the handmade tortillas, the generous amount of guacamole, grilled cebollitas (green onions), and grilled nopales (cactus) — they’re truly PERFECTION.

Wednesday, August 25th

Breakfast - Nutty Açai Bowl from Robek’s

We were craving our favorite bowl from Robek’s this morning. To make it vegan, ask for no bee pollen and no honey. We add agave and strawberries to our bowls.

Lunch - Garlic Noods from MANEATINGPLANT + leftover tacos from Vegan Urbano

We heated up MANEATINGPLANT’s Garlic Noodles for lunch and we also ate the last of our leftover tacos from Vegan Urbano.

Snack - Lay’s Funyuns Onion Flavored Wavy Chips

We had seen that Lay’s made Funyun Onion Flavored Wavy Chips that are vegan-friendly! Our Target ran out of stock but still had the chips available to ship so we ordered 10 bags and they FINALLY arrived this afternoon! We couldn’t help it and ate a whole bag. These taste like the perfect mixture of Funyun’s and Sour Cream & Onion chips! These are apparently only available for a limited time so stock up on them while you can!

Pick Me Up - Tea from The Coffee Bean Tea & Leaf

We were both craving a little pick me up on this hot day. We ended up going to The Coffee Bean Tea & Leaf and we ordered their Mango Cold Brew Tea and their Swedish Berries Iced Tea both iced! They were too sweet for us personally and if we ever get them again we’ll get them unsweetened so we can taste the tea better. I forgot to take pictures.

While we were there we also saw that they have a Beyond Breakfast Sausage’ Sandwich now, which upon research I unfortunately found out it can’t be made vegan as they’re prepackaged with egg and cheese.

Dinner - Shoyu Ramen from Jakes Rockin Ramen

We were craving ramen and decided to try out Jakes Rockin Ramen in Temecula. I’ve had them once before and enjoyed it so I was excited to have their ramen again. These are their vegan-friendly broths: vegetable broth, Miso broth, and Shoyu broth. They also told me I could make any of them spicy too. Their vegan-friendly noodles are the gluten-free noodles and soba noodles.

We ordered 2 ramens with Shoyu broth made spicy and asked for soba noodles and fried tofu as an extra topping. This hit the spot! It’s not the best ramen we’ve had but it had a good flavor and fulfilled our ramen craving. Next time we’ll ask if they can make it extra spicy because it wasn’t spicy to us.
