What We Eat In A Week - Episode 031

Welcome back to a new episode! If you’re new and want to learn more about us and why we started this series, read our about section :)

This week is FULL of amazing vegan food!

On Thursday we had a beach day and enjoyed tacos from Vegan By El Zamorano for dinner with my brothers. On Friday we finally got to try Maya’s Cookies in San Diego! On Saturday we went to Dhillan’s birthday party and he had DeeVeganMunchies catering which we all enjoyed!

Thanks to Brianna we also found a new favorite restaurant in San Diego called Liticker’s Mexican Grill. There’s much more but I’ll let you read through for details. :)

Thursday, July 15th

Breakfast - Just Egg + Rice + Avocado

First, I cooked Just Egg into a scramble. Next, I heated up rice then put the Just Egg scramble over top. For toppings, I drizzled sesame oil, chili oil, and topped off our plates with sliced avocado, red pepper flakes, and seaweed flakes (on my plate). This is our favorite go-to filling breakfast — we have it at least once a week!

Lunch - Sandwich

We were spending the day at the beach with my family so I packed the ingredients to make us a sandwich for lunch. I toasted some Multigrain bread from Costco and spread hummus over each piece. For toppings, I used cucumber and tomato slices, spinach, and Good Planet Foods Plant-Based Hot Pepper Cheese Slices. We bit into a green chili with every bite for an extra kick.

Dinner - Asada + Al Pastor Tacos from Vegan By El Zamorano

We’ve been wanting to take my brothers to Vegan By El Zamorano’s so we finally went there for dinner! We ordered the following: 4 Al Pastor tacos, 2 Asada tacos, 2 Chorizo tacos, 1 California Burrito, 1 Carne Asada Burrito, 1 Al Pastor Burrito, 1 agua fresca de fresa (strawberry water, 1 agua fresca de piña (pineapple water, and 1 kombucha.

Fahim and I shared the tacos — they were even better eating them freshly made instead of takeout!

This is one of our favorite vegan Mexican restaurants! My brothers had the burritos and they also approved.

My brother Javier said, “It was out of this world, like we went to Mars and back!” My brother Jose was apprehensive at first but afterward said, “not going to lie, that was good I scarfed it down.”

Friday, July 16th

Breakfast - Dunkin’ Beyond Breakfast Sandwich

We picked up breakfast from Dunkin’ this morning. To veganize Dunkin’s Beyond Breakfast Sandwich omit the egg and cheese. We like to stack hashbrowns into our sandwiches and add Green Pepper Cholula too! For pictures check out Episode 9!

Lunch - Pasta made by PLVNTFOOD

Brianna made this AMAZING pasta which I scarfed down a plate of for lunch. Fahim also had this pasta for lunch. I’m SO excited for her book to launch!

Dessert - Maya’s Cookies + Vegan Softserve

We were so happy to make it before closing because we’ve been wanting to try Maya’s Cookies for a while now. Maya’s Cookies is an all-vegan black-owned, woman-owned cookie company based in San Diego. They have a storefront in San Diego but also ship their cookies nationwide!

We ordered their oat milk soft serve chocolate and vanilla swirl topped with vegan M&M’S, sprinkles, and nuts. The soft-serve blend reminded us of the M&M McFlurries.

Sadly they were out of most of thre cookies but we were able to order the following: 1 s’mores cookie, 3 marble cookies, 1 snickerdoodle cookie, 1 birthday cake cookie. These cookies were mindblowing — we cant wait to go back and try more flavors! They have different flavors every day.

Dinner - Trader Joe’s Vegan Ranch Crunch Salad Kit

This Trader Joe’s Vegan Ranch Crunch Salad Kit is so convenient to have. Whenever we go to Trader Joe’s we grab a few bags. We highly recommend trying it out!


Saturday, July 17th

Breakfast - Marble cookie from Maya’s Cookies

For breakfast, we each had a marble cookie from Maya’s Cookies. I also made us our morning beverages. To read how I make Fahim’s Cold Brew and my CBD matcha at home check out episode 30!

Lunch - Vegan Tamales + Al Pastor & Asada Tacos

We went to a friend’s birthday party this day. He had DeeVeganMunchies catering which was great! We loved the tamales and Asada + Al Pastor tacos!

Dessert - Vegan Donuts + Cheesecake

We also enjoyed vegan donuts at the party. I had a maple bar from Jenny’s Donuts in Redlands which is now our new favorite, the donuts were so soft and airy! We also took some leftover donuts from the Donuttery home with us.

Bianca brought their wonderful vegan cheesecakes to the party that we got to try a piece of! I can’t wait to go and get more from them — follow their IG here, they sell their treats in the IE!

Dinner - Trader Joe’s Vegan Ranch Crunch Salad Kit

We had Trader Joe’s Vegan Ranch Crunch Salad kit again for a light dinner.


Sunday, July 18th

Breakfast - Leftover Vegan Donuts

We had the leftover donuts from The Donuttery and Jenny’s Donuts for breakfast this morning along with our morning beverages.

Lunch - Leftover Vegan Al Pastor + Asada Tacos & Rice

We had leftover Al Pastor and Asada tacos from the day before for lunch along with a side of rice.

Snack - Guava

My dad got these huge guavas from a small family-owned market we’ve been going to for years. I had one as a snack!

Dinner - Leftover Pasta made by PLVNTFOOD

For dinner, we heated up the last of that excellent pasta Brianna had made!

Dessert - Trader Joe’s Hold The Dairy! Mini Coconut Non-Dairy Frozen Dessert Cones

We tried Trader Joe’s new Mini Coconut Non-Dairy Frozen Dessert Cones and they were alright but honestly we’d rather get Jolly Llama Vanilla Fudge Sundae Cones. A small cone is definitely not enough. The Jolly Llama’s are also creamier. It’s nice to see this as an option but personally, we wouldn’t get it again.


Monday, July 19th

Breakfast - Smoothie

For the smoothie base, I used Rader Farms Fresh Start Organic Smoothie Blend and Wawona’s Frozen Daybreak Blend from Costco. Then I added plenty of peanut butter and 1 tablespoon of moringa powder. For the liquid portion, I used Tropicana Essentials Pineapple Mango Probiotic Juice, a Sol-ti Ginger SuperShot, and a Sol-ti Blue Mystic SuperShot. This smoothie was awesome!

Lunch - Chick’n Tenders + Cookies n’ Creme Milkshake from Plant Power Fast Food

Brianna’s fiancée Zach kindly got us some chick’n tenders and a cookies n’ creme milkshake from Plant Power Fast Food. Fahim and I shared the tenders and the milkshake! The chick’n tenders from Plant Power Fast Food are our favorite. Their milkshakes remind me of the milkshakes from Jack In The Box!

Pick me up - Yerba Mate

We picked up some yerba mate tea for little pick-me-up.

Dinner - Vegan “Hot Cheeto” Carne Asada Fries + Vegan Incredible Burrito from Liticker's Mexican Grill

Brianna had told me about this place and I couldn’t wait to try it out so we went for dinner! We ordered their vegan “hot Cheeto” carne asada fries, a vegan incredible burrito, and a vegan horchata. This is now one of our favorite places in San Diego — everything was amazing!

Their horchata tasted exactly like my mom’s horchata I was blown away!


Tuesday, July 20th

Breakfast - Robek’s Nutty Açai Bowl

This is our favorite açai bowl! To veganize it ask for no honey and no bee pollen. We add agave and strawberries to our bowls too!

Lunch - Vegan Quesabirria + Vegan Adobado + Chorizo + Asada Tacos from Liticker's Mexican Grill

We ended up going back to Liticker's Mexican Grill for lunch because we couldn’t wait to try more things! We ordered: 3 quesabirria tacos, 2 vegan adobado tacos, 2 vegan chorizo tacos, 2 vegan Asada tacos, and 1 vegan horchata. We shared the chorizo, asada, and quesbirria tacos there. Their quesabirria tacos are incredible we will definitely be getting them again and again!

Dinner - Trader Joe’s Vegan Ranch Crunch Salad Kit + Leftover Adobado Tacos & Mango Habanero Wings from Liticker's Mexican Grill

We kind of threw together a very random dinner this night. We had Trader Joe’s Vegan Ranch Crunch Salad Kit, leftover adobado tacos, and mango habanero wings from Liticker’s.

I’m telling you, pre-made salads are truly so convenient to have! The adobado tacos from Liticker’s were our favorite TJ-style taco flavor thus far.

The vegan wings were fantastic! We got the mango habanero sauce on them. I also gave a couple of wings to my brother and he loves them too. :)


Wednesday, July 21st

Breakfast - Just Egg Scramble + Sautéed Veggies + Hashbrowns + Avocado

First, I air-fried a couple Trader Joe’s Hashbrowns at 400°F for 8 minutes and made Just Egg into a scramble in a pan. In another pan, I sautéed zucchini, tomato, and half an onion. For seasonings, I used sea salt, pepper, and garlic powder.

I plated everything along with a quarter of an avocado on each plate. I also made us a fruit plate but we didn’t have time to eat it so I saved it for us to snack on later in the day.

Lunch - Vegan Quesabirria from Liticker’s Mexican Grill + Taylor Farms Thai Chili Mango Chopped Kit

I heated up the last leftover quesabirria tacos from Liticker’s for lunch! We also shared a salad Brianna kindly gave us.

This Taylor Farms Thai Chili Mango Chopped Kit is delicious and Brianna topped it with Alpha Foods Chick’n Patties and avocado which elevated it!

Snack - Guava + Mango

We snacked on the fruit plate I’d made earlier. I cut up a humungous guava into cubes and sliced a mango. I love having fruit to snack on during the day!

Dinner - Soup made by PLVNTFOOD

For dinner, I heated up some of this comforting soup that Brianna gave me. I topped it with red pepper flakes and vegan parmesan I got from Tijuana.
