This week's highlights were Chick’n Fajita Burritos from Tocaya Organica, sushi from RICE, tacos from Pancho's Vegan Tacos, Beer Brats with Beer Cheese on a Pretzel Bun, and more!

This week was a super busy week — because of that there are vegan quick meal ideas, takeout like Chick’n Fajita Burritos from Tocaya Organica, donuts, Thai food, healthy sushi, tacos, amazing Beer Brats with Beer Cheese on a Pretzel Bun + Falafel made by Brianna from PLVNTFOOD, and more!

Thursday, May 27th

Breakfast - Papa’s Con Chorizo De Soya

I made papas con chorizo for breakfast. I used Cacique’s Soy Chorizo which is my favorite vegan chorizo. For sides, I heated up flour tortillas from Tijuana and avocado. The detailed recipe for how I make this will be in my cookbook I’m working on! This is one of my all-time favorite breakfasts.

Lunch - Trader Joe’s Vegan Ranch Crunch Salad Kit + Greek Style Mac n Cheese made by PLVNTFOOD

I heated up the last of the amazing Greek Style Mac n Cheese Brianna made. As a side, I prepared the premade salad from Trader Joe’s which we all enjoyed! Usually, Fahim doesn’t typically enjoy premade salads but even he was a fan of this one. My mom tried it and approved too.

Snack - Trader Joe’s Vegan Cookies & Creme Vanilla Bean Bon Bons

These new vegan desserts from Trader Joe’s are too good! I loved that the cookie crumbles in it were bigger than usual because that’s my favorite part.

Dinner - Paldo Kimchi King Bowl

These noodles are the best! They’re our absolute favorite. We found them at Costco!


Friday, May 28th

Breakfast - Breakfast Bagel + Kale & Berry Smoothie

First I made a smoothie using Costco’s Fresh Start Frozen Smoothie Mix and kombucha. Next, I made the breakfast bagel.

I toasted a couple Daves Killer Bread Everything Bagels. Then I cooked Gardein’s Breakfast Saus’age patties, sliced tomato, and cucumber. Lastly, I spread Treeline’s Chive and Onion Cashew Cream Cheese onto the bagels and topped it with the saus’age patty, tomato, and cucumber. This is simple to make and so filling!

Lunch - Vegan Beer Brat w/ Beer Cheese on a Pretzel Bun + Falafel Wrap made by PLVNTFOOD

Brianna made Tofurkey Beer Brats with beer cheese on a pretzel bun topped with caramelized onions and mustard seeds. This was so delicious! They also made an incredible falafel wrap which Fahim had for lunch before we went on a hike. For Brianna’s recipes check out her website!

Pick Me Up - Peet’s Coffee Cold Brew + Oatmilk Horchata Latte

Before we went on our hike we needed some liquid energy to get us through the rest of the day. We stopped by Peet’s Coffee, our favorite coffee place! Their new Oatmilk Horchata Latte is immaculate! They also have an all-vegan breakfast sandwich that we want to try, if we weren’t already stuffed we would’ve got it for lunch this day.

Dinner - Vegan Chick’n Fajita Burrito + Guacamole from Tocaya Organica

After our hike, we picked up dinner from Tocaya. Their vegan chick’n fajita burrito and guacamole with plantain chips are divine we can’t recommend it enough!


Saturday, May 29th

Breakfast - Vegan Donuts from Wongz Donutz

I was craving donuts for a while so we picked up a box from this family-owned small business nearby with vegan options! The following is what we ordered from that day’s vegan selection: 6 Boston creme pie donuts, 3 blueberry donuts, 3 bars. We recommend checking them out if you’re in the area!

Lunch - Falafel Plate

First, I heated up falafel patties Brianna made in the air fryer at the lowest setting for 3 mins. Next, I threw together a side salad and added lettuce in a bowl along with diced tomato and cucumber, white wine vinegar, salt, pepper, lemon juice, and olive oil. Then I heated up pita bread in the air fryer for 2 mins and added tahini into some leftover hummus dip. Lastly, I plated everything topped the salad with Follow Your Heart’s Feta Crumbles and added some pickled veggies to the plate that Brianna made. This was perfect!

Dinner - Indomie Special Chicken + Maggi Noodles w/ side of Gardein Ultimate Nuggets

First, we air-fried Gardein’s Ultimate Nuggets and snacked on them while Fahim made the noodles. We decided to combine a packet of Indomie and Maggi Noodles which ended up being tasty as we predicted. In our opinion, Gardein’s new Ultimate Tenders beat their nuggets only because the tenders are bigger and have more breading but this new line they have is truly glorious. I also set aside Hidden Valley’s Vegan Ranch and Frank’s Buffalo Sauce to dip the nuggets in too.


Sunday, May 30th

Breakfast - Vegan Donuts from Wongz Donutz

We had leftover donuts for breakfast along with our morning beverages.

Lunch - Falafel Plate

I made the same thing for lunch as the day before but without a hummus + tahini side, because we sadly didn’t have any more hummus, ours had gone bad early for some reason.

Dinner - Panang Curry + Spicy Basil Fried Rice from Palm Thai Cuisine

I was visiting my grandma this evening, it got late before we knew and my mom wanted to pick up dinner to go before we all drove back home. I ordered Panang Curry with tofu and Spicy Basil Fried Rice with tofu. Fahim and I split both dishes for dinner! This is our favorite Thai place and we’re so happy they’ve expanded so we can all enjoy their wonderful food more!


Monday, May 31st

Breakfast - Vegan Donuts from Wongz Donutz

We had le the last of the leftover donuts for breakfast along with our morning beverages.

Lunch - Air fried Tofu + Rice + Bellpepper & Mushrooms + Avocado

First I added rice into the rice cooker. Then I air-fried frozen tofu for a total of 10 mins (flipped it after 5 mins). I sauteed red bell pepper, yellow bell pepper, and mushrooms along with salt pepper and garlic powder. When the tofu was done I tossed it in Hoisin sauce and sriracha. Lastly, I plated everything along with a side of avocado. This was simple and delightful.

Snack - Watermelon w/ Tajin

Dinner - Vegan Beer Brat w/ Beer Cheese on a Pretzel Bun + Nongshim So Veggie Ramen

I heated up the leftovers Brianna had given me from Friday. I didn’t add mustard seeds because I don’t have any but I added crispy jalapeños to the top of the sausage. Fahim had ramen for dinner because he’s not a big fan of sausages/hot dogs.

Snack - Apples n Greens + Peach Perfection from Jamba Juice

After we did groceries I was craving a smoothie so we picked up Jamba Juice on our way home. I ordered Apples n Greens and added ginger to it. Fahim ordered peach perfection and added their Oatly oat milk ice cream and peanut butter to it. We were pleasantly surprised by the news about the Oatly ice cream, I read they wanted it to act as a vegan option to substitute sherbert and yogurt. It’s exciting to see all these new vegan options!

Dessert - Endangered Species Oat Milk Rice Crisp + Dark Chocolate

This is our new favorite chocolate bar! I’ve been wanting to try this brand for a while and it didn’t disappoint. We found the chocolate bars at Walmart.


Tuesday, June 1st

Breakfast - Just Egg + Rice + Avocado

First, I cooked Just Egg into a scramble and added mushrooms into the scramble towards the end. Next, I heated up rice then put the Just Egg over top. I also sliced up avocado to have on the side. For toppings, I drizzled sesame oil, chili oil, and topped off our plates with red pepper flakes and seaweed flakes (on my plate). This is one of our go-to breakfasts!

Lunch - Vegan Tacos + Horchata from Pancho’s Vegan Tacos

We used to go to Pancho’s Vegan Tacos regularly when we lived in Vegas. They finally opened a location in Long Beach this year that we had been wanting to go to and we decided to stop by for Taco Tuesday. We ordered 2 horchatas and the following tacos: 4 Al Pastor, 2 Carnitas, 2 Asada, and 2 Chorizo. We also ordered supreme fries to go with Al Pastor as the protein! Everything was even better than the last time we had it! We’d recommend going on taco Tuesday to get a good deal, remember to ask them to add the taco Tuesday special to your order.

Snack - Supreme Fries from Pancho’s Vegan Tacos

After we went pedal-boating we had a few bites of the supreme fries as a snack before we went to the movies.

Dinner - Vegan Sushi + GF Double Chocolate Cake from RICE

I had been wanting to try this sushi place for a few years and decided to check it out for dinner since we were in the area. We ordered the following from their vegan options: sake sampler, crunchy dynamite roll, green garden roll, yellow brick road roll, and GF double chocolate cake. We enjoyed the crunchy dynamite and green garden roll the most. It was different than what I expected because I didn’t realize their aim was healthy eating but it was still good. The chocolate cake was amazing! Next time we come we want to try their ramen.


Wednesday, June 2nd

Breakfast - Dunkin’ Beyond Breakfast Sandwich

We picked up breakfast at Dunkin’ before we drove over to our chiropractor. To veganize Dunkin’s Beyond Breakfast Sandwich omit the egg and cheese. We like to stack hashbrowns in our sandwiches along with Green Pepper Cholula Sauce. For pictures check out Episode 9!

Snack - Fries from Farmer’s Boys

We picked up some fries to snack on because we had to wait for our chiropractor to arrive.

Lunch - Vegan Out Sandwich from The Last Drop Cafe

After our appointments, we went to get a late lunch from a Cafe. We ordered 2 of their vegan out sandwiches — Fahim omitted the mustard from his so the owner kindly added extra avocado to his sandwich. This sandwich was so satisfying! Their sourdough bread was soft and fluffy. We highly recommend checking out this cafe if you’re in the area. They also had some vegan desserts available.

Pick Me Up - Nitro Cold Brew + Iced Chai w/ Oatmilk & Espresso from Classic Coffee

We stopped at a cafe for some coffee and spent some time there to avoid getting stuck in rush hour traffic. This coffee shop is nice and relaxed, the last time we came was in 2018 so it was nice to come back.

Dinner - Nongshim So Veggie Ramen

After we got home I was too hungry to cook anything. These cups come in handy for a quick warm meal.

Snack - Oreo O’s Cereal

I was still a bit hungry so we had a bowl of this Oreo cereal we found at Grocery Outlet that’s accidentally vegan. I would definitely get this again its a good sweet treat.
