This week's highlights were vegan Mexican street food and flan from El Cocinero, Monty's Good Burger, Turk'y Roast Dinner with homemade buttermilk biscuits, homemade poke bowls and more!

Thursday, May 13th
Breakfast - Gardein Stea’k & E’ggs Breakfast Bowl
These bowls come in handy for a quick breakfast! We found these at Grocery Outlet.

Lunch - Gardein Orange Beefless Bowl
Again these bowls are convenient to have for a quick meal. The portions aren’t big but we usually snack on something else afterward too.

Snack - Watermelon
We ate half a watermelon with spoons.

Dinner - Pasta Salad
First, we cooked penne pasta. Next, I cooked Plant Ranch Foods Al Pastor along with fresh jalapeños, cajun seasoning, a version of Lawry’s from Cardenas, black pepper, and lime juice. Once the pasta was cooked I drizzled it with olive oil, white wine vinegar. For seasonings, I used oregano, Italian seasoning, garlic powder, salt, and black pepper. Lastly, I mixed in the Al Pastor, diced tomato, cucumber, and avocado. This is so delicious and filling! You’ll also have plenty of leftovers for days.

Friday, May 14th
Breakfast - Tiramisu Pancakes
For the batter, I used King Arthur Flour Essential Goodness Super Grain Pancake Mix. The mix itself is vegan friendly — I used Just Egg, almond milk and canola oil for the mix-ins. I also added espresso powder, cinnamon, and maple syrup into the batter. These pancakes were pretty good for “healthier” pancakes! I drizzled maple syrup over the top of ours.

Lunch - Paldo Kimchi Noodles
These noodles are THE BEST! We found them at Costco. We had them as a late lunch because we had to go to the mechanics.

Dinner - Leftover Pasta Salad
I’m telling you making pasta salad is the best kind of meal planning.
Saturday, May 15th
Breakfast - Gardein Stea’k & E’ggs Breakfast Bowl
We were going to LA so we had a quick breakfast before getting ready.

Lunch - Chicarron, Al Pastor, & Mushroom Saudero Tacos from El Cocinero +Avocado Sandwich from Joe & The Juice
My friend and I had lunch at El Cocinero. This was both of our first times trying this place. Honestly, I can't recommend it enough this is the best spot to go to for vegan Mexican street food hands down! I ordered tacos and flan along with a burrito to go to have the next day. Fahim had lunch with his friend at Joe & The Juice and ordered the following: Avocado Sandwich without cheese (their pesto is vegan now!), and the energizer juice. (not pictured)

Dessert - Flan from El Cocinero
I’m still thinking about this flan, it was heavenly!

Dinner - Burgers & Max’d Out Fries from Monty’s Good Burger
We’d planned on going to Hinterhoff LA for their last night of operation but the line was so long we ended up going to Monty’s instead. We ordered a single cheeseburger and a double cheeseburger and Max’d Out Fries. You just can’t go wrong with Monty’s — its the vegan version of In -N- Out but even better!

Sunday, May 16th
Breakfast - Leftover Pancakes with Berries
I put frozen berries into a small pot along with a bit of water and brown sugar. After it came to a boil a couple of times I took it off the heat and poured the berries onto some heated-up pancakes from the other day.

Lunch - Al’s Special Burrito from El Cocinero
Fahim heated up the burrito from El Cocinero for us to split for lunch. It has 3 proteins I chose Al Pastor, Carnitas, and Asada. Oh was it scrumptious! We even love their salsas. It did have beans so I had to take my meds (I have IBS) but it was worth it.

Dinner - Al Pastor Tacos + Leftover Pasta Salad
I made Al Pastor tacos for my brother and couldn’t help but have a couple. I heated up Plant Ranch Foods Al Pastor in a pan. I added a diced fresh jalapeño, cajun seasoning, a version of Lawry’s from Cardenas, black pepper, lime juice to the Al Pastor too. When I got home Fahim and I shared the last of the pasta salad for dinner.

Monday, May 17th
Breakfast - Just Egg Scramble with Rice
First I made rice and while it cooked I cooked Just Egg into a scramble. Next, I added rice to our plates and put Just Egg over top. I also sliced up avocado to have on the side. For toppings, I drizzled sesame oil, chili oil, and seaweed flakes (on my plate). This is our favorite breakfast, we have it at least once a week.

Lunch - Nongshim So Veggie Ramen Noodle Soup Cup
It was cold and we weren't too hungry so the only thing we could think of having for lunch was ramen.

Snack - Cherries

Dinner - Gardein Savory Stuffed Turk’y + Homemade “Buttermilk” Biscuits + Potatoes & Corn
First I made buttermilk biscuits using Solo Budget Vegan’s video. Next, I air-fried Gardein’s Turk’y. While that cooked I washed potatoes and thinly sliced them. I placed the potatoes on an oiled baking sheet, sprayed oil over them, and seasoned them with cajun seasoning, garlic powder, and black pepper.

Once the Turk’y was done I put it into the oven to stay warm. Then I put the potatoes into the air fryer at 400°F for 15 minutes. While the potatoes cooked I heated up some frozen corn and the gravy that was with the Turk’y and placed the pot and pan into the oven to stay warm. Once the potatoes were done I plated everything together. I was craving comfort food since it was a cold day and this was so satisfying!
Tuesday, May 18th
Breakfast - Breakfast Biscuits
First I cooked Gardein’s Breakfast Saus’age Patties and Just Egg into a small omelette. Next, I heated up the buttermilk biscuits from the day prior for 10 seconds. Then I melted Violife Foods Cheddar slices on a small pan. Lastly, I placed everything onto the biscuits. This was incredible!

Lunch - Fry’s Family Vegan Mediterranean Woodfired Pizza
This is one of the few frozen pizzas we enjoy. We cooked it in the oven and topped it with vegan parmesan, and red pepper flakes. I added Hidden Valley’s Vegan Ranch on the side as a dip.

Snack - Watermelon

Dinner - Rubio’s Coastal Grill Impossible Taco Salad
We were about to spend a few hours painting so we picked up a quick dinner beforehand. We ordered two Impossible taco salads with no dressing. It’s vegan-friendly when you omit the dressing. Our local Rubio’s informed us that they’d be taking this option out of their menu next week which we were sad to hear but we’re glad we got it one last time before it was gone. They forgot to give us salsa so we added green salsa we had at home and I added Tapatío to mine.

Snack - Oreo O’s Cereal
I wanted something sweet so I tried this Oreo cereal we found at Grocery Outlet that’s accidentally vegan. I would definitely get this again its a good sweet treat.

Wednesday, May 19th
Breakfast - Gardein Stea’k & E’ggs Breakfast Bowl

Lunch - Homemade Poke Bowls
First I cooked frozen tofu on an oiled pan and added garlic powder and hoisin sauce to it. Once it was golden brown I put it into the oven to stay warm. As I was cooking the tofu I also heated up two cups of rice and evenly divided them into two bowls. Next, I cooked frozen corn plus a bit of a frozen vegetable medley along with some garlic powder. Then I diced cucumber, minced cilantro, sliced green onions, and avocado. Lastly, I placed the toppings onto the rice and drizzled the bowls with tamari, sesame oil, chili oil, rice wine vinegar, and sriracha. I added seaweed flakes to my bowl too. This was incredible and I will be making this more often!

Snack - Watermelon w/ Tajin & Cherries

Dinner - Udon Soup
I used Fortune Udon Mushroom Flavor and followed the cooking intructions for soup. I like to add more to the broth this time I added sesame oil, chili oil, garlic powder, and a handful of kale. Lastly. I topped our bowls with crispy jalapeños, red pepper flakes, and seaweed flakes on my bowl. This is super easy to make and tasty!
