What We Eat In A Week - Episode 012
Highlights include homemade vegan tamales, sushi and ramen from Shojin, soft-serve pies from Magpies, Monty's Good Burger, tacos from El Zamorano, and more!
Thursday, March 4th
Breakfast - Oats topped with “Nutella” & Strawberries
I added a dollop of the vegan version of Nutella by the brand Nutiva along with some strawberries to the cooked oats. This was good & quick!

Lunch - Pozole
I heated up what was left of the pozole from the other day but this time I added some Plant Ranch Foods Carne Asada to it too. This was soo filling and delicious!

Dinner - Gardein Orange Beefless Bowl
We were still pretty full from lunch so I heated up some of these bowls we got at Grocery Outlet. They come in handy when you want something light and quick or when you’re on the go!

Snack - Veggies + Hummus
We wanted something to snack on while watching TV. I put some sliced cucumber and bell pepper onto a plate along with some baby carrots and hummus!

Friday, March 5th
Breakfast - Rice + Just Egg Scramble + Avocado
First I put the rice into the rice cooker. While that was ready I made a Just Egg scramble. Next, I added rice to the plate then the scramble. Topped both of our plates with half of an avocado and red pepper flakes. On my plate, I added sesame oil, chili oil, and seaweed too. This is one of our go-to breakfasts it’s great!

Lunch - Rice + Gardein Chipotle Georgia Style Chick’n Wings + Veggies
While Fahim cooked the Gardein Chick’n wings I sauteed the asparagus and kale in another pan. I added lemon juice + salt & pepper to the veggies. Then we plated everything with a side of rice from the morning. This lunch combo is always amazing!

Dinner - Grilled Vegetable Ravioli
First I cooked the grilled vegetable ravioli we found at Costco that’s vegan-friendly. Then heated up some marinara and added some Italian seasoning to it. Lastly, topped off our plates with nutritional yeast. Easy to make and so good!

Saturday, March 6th
Breakfast - Toast with Kite Hill Chive Cream Cheese
I toasted some vegan-friendly multigrain bread we get from Costco and spread some Kite Hill Chive Cream Cheese over top! Kite Hill is in our opinion the best vegan cream cheese. Our absolute favorite is the jalapeño flavor than the chive.

Snack - Jicama
I cut up some jicama to have as a snack since we were going to end up having a late lunch.

Lunch - Vegan Pizza + Side Salad
My brothers came over for lunch. Originally we were going to pick up Vietnamese food but the restaurant was closed. We ended up ordering pizza instead from Papa G’s in Wildomar. The vegan pizza from here is so good! We ordered 2 XL vegan pizzas. Ask for vegan cheese they use Daiya Foods Shreds. For the first pizza, we had the following toppings: beyond meat sausage, jalapeños, mushrooms, bell peppers.

For the second pizza, we got the same toppings but switched bell peppers for pineapple. I’m still not a fan of pineapple on pizza but some of my brothers are. Next time we will get fewer toppings because we didn’t realize they counted the vegan cheese as a topping. I also made a side salad with spring mix and cucumber. For the dressing, I used balsamic vinegar, lemon juice + salt & pepper.
Dinner - Leftover Pizza
We had some leftover pizza while we watched a movie. P.S. it’s good cold too!
Sunday, March 7th
Breakfast - Robeks Nutty Açai Bowls
This is our favorite bowl from Robeks. To veganize this bowl omit the bee pollen and honey. We add agave to our bowls along with strawberries as an extra topping!

Lunch - Monty’s Burgers + Fries
We originally planned on trying Lettuce Feast for lunch but sadly one of their food trucks caught on fire the day before and they didn’t end up opening this day. They need help to recover if you can donate or share their GoFundMe — here’s the link! We plan on visiting again soon for their food. We ended up deciding on going to Monty’s for lunch. We ordered two double cheeseburgers and Max’d out fries. They make our favorite vegan burgers they hit the spot every time!

Dessert - Magpies
We picked up our preorder of two whole softserve pies for my birthday the next day. While we were there we picked up two individual slices of soft-serve pies. I picked the grasshopper flavor which was a mint chocolate soft-serve pie + the dark chocolate truffle flavor! Magpies softserve pies are heavenly! Fahim made getting Magpies my birthday tradition and I’m very happy about it :) We ate the grasshopper slice in the car and saved the other slice for when we got home.

Dinner - Shojin
Shojin was so flavorful! We ordered one dinner plate and two sushi rolls the ones we chose were the dynamite roll & dragon roll + ramen we saved for the next day. This restaurant is more pricey so for us, it’ll be reserved for special occasions! We ate the dinner plate in the car and had the sushi rolls when we got home :)

Monday, March 8th
Breakfast - Gardein Breakfast Bowl + The Coffee Bean Tea & Leaf
This morning I heated up some breakfast bowls. I knew we were going to eat a lot later so I didn’t want anything too heavy.

We also went to Coffee Bean for my free birthday drink, I ordered an iced soy latte! Fahim got a cold brew. Last week I forgot to write about their vegan baked goods. They have vegan banana walnut bread and vegan brownies. Both are tasty but our favorite is the banana bread! It’s exciting to see they have vegan sweets hopefully next they make more vegan drink options because as far as I know their flavor syrups and powders have dairy. We wanted their banana bread this day but they were out.

Lunch - Shojin Ramen
I heated up the two Shojin Ramens we ordered the day before. Their ramen was tasty the only thing missing was more spice so we added hot sauce to ours!

Dinner - Vegan Tamales
My mom made a pot of vegan tamales for my birthday. She uses a masa (maize dough) from a local family-owned Mexican store we’ve been going to for years. For the filling, she used homemade Mole Rojo, Good Planet Dairy-Free Mozzarella, Gardein Meatless Chick’n Strips for most of them, and Soy Chorizo on some, sliced fresh jalapeños, potatoes, and zucchini. Topped them with thinly sliced cabbage + salsa. My mom’s tamales are my absolute favorite they’re incredible!

Dessert - Magpies
For dessert, we cut the two soft-serve pies! The pie flavors we ordered were one whole Original Fried soft-serve pie (vegan) and one whole Irish Cream soft-serve pie (vegan). I had one slice of the original flavor and Fahim had a slice of each.

Snack - Duro con Papas Curtidas
I had to have at least one duro (puffed wheat) con papas curtidas (pickled potatoes). I drizzled lemon juice and Tapatío over top! This is the best!

Tuesday, March 9th
Breakfast - Tamales
I heated up some leftover tamales for breakfast! Topped them off with cabbage + salsa!
Lunch - Yakisoba Noodles
I heated up some vegan-friendly Yakisoba Noodles from Costco. This is a frozen item we have to get it’s an easy meal and you can’t go wrong with noodles!

Dinner - Vegan Tacos from Vegan By El Zamorano
We drove to Costa Mesa to get tacos from Vegan By El Zamorano. We ordered the following: 2 Asada tacos, 2 chorizo tacos, 4 al pastor tacos, and one large horchata. This all-vegan Mexican restaurant is our favorite place to treat ourselves to vegan Mexican food when I’m not making it of course. The best taco in our opinion is the al pastor one (we have yet to try their carnitas). I love that they use fresh tortillas because tortillas hechas a mano are top-tier. Their Chile Relleno burrito and Cali burrito are incredible too!

Wednesday, March 10th
Breakfast - Dunkin’ Beyond Breakfast Sandwich
We ordered two Beyond sandwiches and two hashbrowns. To veganize their beyond sandwich omit the egg and cheese. For details on how we eat ours + pictures check out Episode 9!
Lunch - Tamales
We heated up more leftover tamales. As always topped them with cabbage and tomato salsa but this time I added tomatillo salsa too!

Dinner - Rice + Gardein Chipotle Georgia Style Chick’n Wings + Veggies
Fahim cooked the Gardein Chick’n wings while I sautéed the veggies. I used half an onion, 2 bell peppers, and 1 zucchini. Next, I added lemon juice and seasoned the veggies with salt, pepper, and garlic powder. Then Fahim heated up the leftover rice we had in Tupperware. Lastly, I plated everything. There were veggies leftover that I decided to add over some leftover pasta to jazz it up for the next day. This meal combo is our favorite, you can’t go wrong with rice and veggies paired with a protein!
