Highlights include vegan Pad Thai, "pollo" asado tacos, homemade apple pie, Aloo Chaat & more!
Thursday, January 21st
Breakfast - Just Egg with Spanish rice + Avocado
We wanted to eat a lighter breakfast this morning so I heated up some leftover Spanish rice & topped it with Just Egg scramble & half of an avocado. Simple & satisfying!

Lunch - Leftover Enchiladas
For lunch I heated up the last of the leftover Red Enchiladas for more info on those checkout Episode 005! Lastly I heated up some leftover Spanish rice too!
Dinner - Trader Joe’s Vegan Tikka Masala
For dinner I heated up one of our favorite frozen meals from Trader Joe’s! These come in handy for a good quick meal.

Friday, January 22nd
Breakfast - Trader Joe’s Vegan Banana Bread + Tea & Coffee
For breakfast we each had two slices of Trader Joe’s Vegan Banana Bread along with our coffee! Usually I have tea in the mornings but had been craving coffee so I made myself a cup of decaf. :)

Lunch - Fortune Udon Mushroom Flavor
I made us Udon noodle soup from this vegan friendly brand! We get these from Grocery Outlet. Ive also seen them at Ralph’s/ Kroger stores! I cooked the noodles as instructed for soup! I added toasted sesame oil to the broth & topped off the soup with sautéed kale, crispy jalapeños & red pepper flakes. This is an easy & delicious meal!

Snack - Aloo Chaat without the yogurt
We had eaten an early lunch so we got hungry around actual lunchtime. We’d been craving Aloo Chat for a while so ordered some for takeout & ate at a park! To veganize it ask for no yogurt! We ordered from our local favorite Indian restaurant called Indian Masala Craft, Temecula, CA.

Dinner - Beyond Burgers
I made burgers for dinner using Beyond Meat’s Cookout Classic Patty! I seasoned the patty & drizzled it with lemon juice, topped it with Field Roast Chao Slices & covered to melt. For toppings I sauteed some fresh jalapeños & red onion.

Then I toasted Costco’s vegan friendly burger buns & used Best Foods vegan mayo for the spread. Lastly I assembled the burger and added the sautéed toppings along with sliced tomatoes & spring mix. This was amazing & filling!
Saturday, January 23rd
Breakfast - Peanut Butter Cup Oatmeal
This is my favorite way to eat oatmeal. I use 1 cup of oats, 1 cup of water & one cup of plant milk. I usually use almond milk for this. I drizzle in some agave & cinnamon, nutmeg & cloves. I let it reach a simmer then lower the heat and let it simmer for 5 minutes & stir occasionally. Lastly I plate the oats & top them off with vegan friendly semisweet chocolate chips & a dollop of peanut butter!

Lunch - Spanish rice + Veggies + side of Gardein Mandarin Orange Crispy Chick’n
Fahim cooked the Gardein Chick’n. I sautéed kale, bell peppers & a frozen veggie medley. Then I heated up what we had left of the Spanish rice. Then I topped off the Gardein Chick’n with red pepper flakes. Lastly threw it all together on a plate & voila! Not pictured: I ended up adding a quarter of an avocado to each of our plates.

Dinner - Homemade Pad Thai
We finally made Pad Thai for dinner because we had just gotten snow peas. We use the Pad Thai recipe in Chef Chloe Coscarelli’s “Flavor” cookbook! Fahim made the sauce and cooked the noodles while I washed and prepped the veggies. This is always so amazing, it’s one of my favorite dishes to cook!

Snack - Popcorn
We found an accidentally vegan movie theater popcorn at Aldi’s. We snacked on these as we watched TV. In our opinion this popcorn tastes better than the vegan friendly SkinnyPop we usually get! Its cheaper & you get more bags. :)

Sunday, January 24th
Breakfast - Papas con Chorizo de Soya + Just Egg + Avocado & Flour Tortillas
For breakfast I made Papas with Soy Chorizo & Just Egg. First I washed & diced the potatoes. Next oiled a pan, added the potatoes along with seasoning & let them cook on a medium to low heat with the cover on.

After about 10 minutes I stirred in the Soy Chorizo & let it cook for 10 more minutes with the cover on. Lastly plate along with whatever else you want to add. For sides I did avocado & flour tortillas! This is very filling and tasty!
Snack - Aldi’s Vegan Friendly Popcorn & Abuelita Hot Chocolate
We ate popcorn & drank hot chocolate while we watched a movie. If you didn’t know the classic Mexican Abuelita Hot Chocolate Tablets are vegan friendly! As well as Ibarra’s Hot Chocolate Tablets but I prefer Abuelita.

Lunch - Leftover Pad Thai
Dinner - Homemade Veggie Soup + Cheezy Garlic Bread
The veggie soups I make are always different. Here’s what I did this time. First I let the water boil, added salt and chicken less seasoning to it. Then I added 1 celery stick, 4 small potatoes, 2 carrots, some leftover pasta shells, 1/2 cup of quinoa, 1 orange bell pepper & 1 yellow bell pepper, half of a sliced onion, frozen corn, 1 fresh jalapeño sliced, Plant Ranch carne asada & 2 big handfuls of kale. I added the following seasonings to the broth towards the end: garlic powder, sea salt, black pepper, oregano, a Mexican version of Lawry’s we got at Cardenas. This soup was flavorful & we had plenty of leftovers!

Lastly I made garlic bread using Trader Joe’s Soft Multigrain Rustico Bread. Take out as many pieces as you’d like then melt some vegan butter I used Earth Balance along with A LOT of garlic powder. Spread the garlic butter concoction on top of the bread and sprinkle some vegan shreds over top I used Vevan Foods pepper jack shreds then sprinkled Italian seasoning over top. I baked the garlic bread at 450°F for 5 minutes.
Monday, January 25th
Breakfast - Leftover Papas con Chorizo + Just Egg
I heated up the leftovers from the day before along with a side of salsa, avocado & flour tortillas!

Lunch - Leftover Veggie Soup
I heated up leftover veggie soup for lunch and baked a few more pieces of cheezy garlic bread!
Dinner - Mi ABC Mi Instant Goreng noodles + Just Egg
Fahim cooked the noodles. I cooked the Just Egg scramble & also sautéed some bell pepper & green onions to add to the noodles. This was easy & good! We prefer the Idomie brand but this is a good option when you cant find Indomie Goreng instant noodles.

Dessert - Homemade Apple Pie
Before dinner I had made 2 apple pies. They were ready after dinner we let them cool down & each had a slice later in the night!

Tuesday, January 26th
Breakfast - Apple Pie & Coffee
For breakfast we each had 2 slices of apple pie each along with our morning cups of coffee/tea!
Lunch - Leftover Veggie Soup
For lunch I heated up the last of the veggie soup leftovers!
Dinner - Tacos de Pollo Asado Vegano & Chorizo de Soya
We made tacos for dinner because we’d been craving them. First I made salsa, like always I use my mamás recipe which you too can make! Click this link to watch the video I have up on our channel!

After the salsa was done we heated up Plant Ranch Food’s Pollo Asado along with extra seasoning + lime juice. We also cooked some soy chorizo. Lastly we heated up our tortillas, cut up some limes & topped the tacos with cilantro & salsa! These always hit the spot they’re oh so delicious!
Wednesday, January 27th
Breakfast - Dunkin’ Beyond Breakfast Sandwich + Iced Coffee
We had woken up early & were too hungry to cook something up so we got Dunkin’. We ordered two Beyond Breakfast Sandwiches to veganize them ask for no egg and no cheese. We also ordered a large Oat milk latte with some hazelnut & mocha swirl!
Lunch - Pesto Pasta
First I cooked some shell pasta. Then I added Trader Joe’s Vegan Kale, Cashew & Basil Pesto along with the following extra seasonings: sea salt, black pepper, garlic powder & Italian seasoning.

Then I added kalamata olives, Plant Ranch Foods pollo asado & cucumber to the pasta. Lastly I topped off our pasta bowls with some avocado, red pepper flakes & Vevan Foods pepper jack shreds! This was easy to make & tasty!
Dinner - Salad
We decided to have salad for dinner since we had a bug lunch. First I added spring mix into a bowl. Then made my own dressing using balsamic vinegar, olive oil, lemon juice, salt & pepper. For toppings I added were garbanzo beans, cucumber & crispy jalapeños! This was good & so simple!

Dessert - Apple Pie
For dessert we had the last of the apple pie I had made earlier!
