What We Eat In A Week - Episode 002
Everything we ate this week, including Gardien's delicious Breakfast Pockets, battered king trumpet mushrooms with gravy and biscuits, pizza, and more!
Thursday, December 24
Breakfast - Oatmeal with chocolate chips & a dollop of almond butter.
This has easily become one of our favorite breakfasts. I wanted a head start on our digestion this morning. It was Christmas Eve so I knew my family was going to stuff us with food later. We also have our coffee/tea every morning!

Lunch - Vegan Tamales with salsa
We still had some tamales my mom had given us. We heated those up & topped them off with some salsa.
Dinner - Pozole & Trader Joe’s Misal Curry with brown rice
We had different dinners this night. I had vegan pozole my cousin made. She’s so sweet and usually makes a separate pot for everyone that doesn’t eat meat!
Fahim had TJ’s Misal Curry with brown rice for dinner. He said it smelled kinda funky but it was pretty good!

Friday, December 25
Breakfast - Asian Pears
We’ve been enjoying having fruit first thing in the morning with our morning cups of coffee & tea.
Lunch - Vegan Tamales topped with salsa & cabbage + avocado
My mom had made another batch of vegan tamales for Christmas. We reheated & prepared them for lunch!

Dinner - Impossible burgers + air fried fries
We had dinner pretty late because we were out. I decided to make burgers because we were craving fries. I cooked the impossible patty on the pan & melted Vevan Foods pepper jack slices by covering the pan for a couple of minutes. For toppings, we used pickles, jalapeños, avocado & spring mix. I seasoned & air-fried frozen steak fries for the side. Now that we look back we should’ve had a lighter dinner this day, our stomachs weren’t happy we ate so much but it was delicious!

Saturday, December 26
Breakfast - Oatmeal with chocolate chips & a dollop of almond butter.
Lunch - Paldo Hot & Spicy Noodles
We wanted something light for lunch since we had been eating a lot. These are so good! I’m happy we finally found them at a local Korean store. Needless to say, we bought their whole supply.

Dinner - Amy’s Paella
We ate A LOT the day before so we weren’t hungry when dinner time came around. This is when frozen meals come in handy. We had Amy’s Paella which obviously doesn’t compare to homemade paella but it’s still really good. We always pick a few of these up whenever we spot them at Grocery Outlet.

Sunday, December 27
Breakfast - Asian Pears
Lunch - A sad order of Del Taco large fries + Kashi almond sea salt granola bar
Here’s the backstory. We originally wanted to get El Pollo Loco Chicken less Burrito which you can veganize, but the El Pollo Loco in our city discontinued their vegan chicken (outrageous).
Our second option was Del Taco. Our usual order is the Beyond avocado taco meal but this time we decided to veganize one of their burritos (big mistake). We waited in line for 30 minutes. Once we got our food we opened our burritos to make sure they didn’t add any cheese or sour cream to it, which they hadn’t but they did add some kind of sauce that obviously had dairy. We ended up giving those burritos to my brothers later & just ate our fries & a granola bar.
Dinner - Poke Bowl from our local poke place.
My mom was craving poke & she knew about our whole lunch fiasco so she graciously got us some poke bowls for dinner. Listed below is what we order from our local poke place. I’d make sure to call whichever place you go to to ask what sauces are vegan friendly.
Poke order: Base: Brown rice. Protein: Tofu. Sauce: House poke sauce. Toppings: Cucumber, Seaweed Salad, Green onion, Avocado, Corn, Crunch onion, Edamame, Cilantro.

Monday, December 28
Breakfast - Asian Pear and Cheezy Avocado Toast topped with Just Egg’s Vegan Egg
This is one of our favorites! First off I toasted four slices of Trader Joe’s Soft Multigrain Rustico Bread. I mashed a whole avocado. Added some salt, pepper & lemon juice to it. Cooked the Just Egg into a scramble. In a separate small oiled pan, I started to melt Violife Foods smoked provolone slices. Once they melted I put the slices on top of the toast then evenly distributed the avocado sprinkled more salt n pepper + red pepper flakes & lastly the vegan scramble.

Snack - Homemade Apple Pie + So Delicious Coconut Macaroon Ice Cream
It was a cold rainy day so I decided to do some baking. As an added bonus it warmed up the house. We couldn’t help ourselves and had two slices of pie each along with some ice cream from So Delicious Dairy Free.

Lunch - Nongshim Soon Veggie Ramen
This is one of our favorite go-to ramens to eat!

Dinner - Vegetable Soup
I was in the mood for a warm bowl of delicious soup. I don’t ever follow a recipe for this I wing it & make my own. This is what I came up with this day. I poured water into a big pot until the halfway point then added vegetable stock for the rest of the broth. Then I added about a cup or more of yellow lentils & pasta shells, 1 cup of quinoa, potatoes, celery, bell peppers (one red one yellow), sliced the corn off of a cob, sliced red onion, a handful of spring mix & spinach towards the end. For seasonings, I added dried oregano, chicken less seasoning, salt + pepper.

Tuesday, December 29
Breakfast - Gardein Eggless Scramble Breakfast Pockets
This was an easy & quick breakfast it’s perfect for on the go too! They’re good & we found them at Grocery Outlet for a good price! The breading reminds us of pizza dough. Like we usually do we added Tapatío to ours. Overall recommend & we will be getting them again.

Lunch - Battered king trumpet mushrooms + garlic mashed potatoes & freshly baked buttermilk biscuits
I went ALL out for lunch. First I baked some vegan buttermilk biscuits! The recipe I use is from Solo Budget-Vegan! Click this link for the video!
After that, I washed the king trumpet mushrooms. I wanted to try coating them in the batter. I followed the batter recipe in Dominique’s @veganhippiesol book! I have the physical copy but there’s also an e-book version! Click this link if you want to get yourself a copy!

I prepped the mushrooms beforehand like Dominique recommends! Once the batter was finished I then drained the mushrooms, patted them dry, tossed them in flour & then into the batter. I air-fried them at 400° for 10 minutes then threw them into the oven for 475° for another 10 minutes. They didn’t look as crispy as I wanted them to so I took them out and pan-fried them until they crisped up! While I did this I also made the mashed potatoes & heated up Tofurkey’s Savory Gravy I used half the tub + some.
It was SO worth the time it took! This was such a big & flavorful lunch.
Dinner - Pho'nomenal Vietnamese Noodle Soup Bowl
We had a very late dinner. This is usually our go-to when we’re not too hungry/ very hungry or too tired to cook. We found these at Costco Business Center! These were our last two bowls & we will be getting these again.

Wednesday, December 30
Breakfast - Beyond Sausage Breakfast Sandwich + (2) hash browns from Dunkin Donuts
To veganize this, ask for no egg & no cheese. We add hash browns to our breakfast sandwich & Cholula Green Pepper hot sauce! (Yes we keep hot sauces in the car)

Lunch - Fry Family Foods Plant-Based Mediterranean Woodfired Pizza
We found this at Grocery Outlet & it is our favorite vegan frozen pizza! We added red pepper flakes to our pizzas. Definitely try this out if you spot it anywhere!

Dinner - Poutine and Gyro Fries from Gentle Grill
My brother invited us to have dinner with him. He wanted to try this local all-vegan restaurant so we ordered pickup & ate in our car! We absolutely love this place! Our usual order is what’s above which are both amazing! I’ve never had poutine fries prior to going vegan, I had my first poutine here! They have my stamp of approval as well as my friend’s mom whose Canadian (they were with me when I first tried this place!) :) My brother ordered the Ruben sandwich which I’ve had before as well & he loved it too!

Highly recommend this place its in Temecula CA it was the first ALL vegan place in the area & is definitely a must-try! Their donuts are also amazing & have a cake consistency. Our favorites are the Oreo cookies & cream & their sun butter chocolate doughnut!
