Everything we ate this week, including a delicious chile relleno burrito, tamales, a quick but easy ramen recipe, and more!

Friday, December 18

Lunch - Poke bowls from a local poke restaurant.

My brother got us poke bowls for lunch, we asked what sauces were vegan & got their vegan-friendly sauce which was a blend of soy sauce & sesame oil & mustard. It was delicious & very filling.

Dinner - Trader Joe's Panang Curry with Jasmine Rice

Since we had a big lunch we weren’t that hungry & opted for a frozen meal. This is one of our favorite microwaveable meals from TJ’s!


Saturday, December 19

Lunch - Veggie Ramen with air fried tofu tossed in hoisin sauce.

Nongshim’s Soon Veggie Ramen has been our favorite instant vegan ramen! We would get the cup version but recently found the bag version which is even better in our opinion. The broth is more flavorful plus the noodles are thicker. The cup version is still good (and convenient too) but we prefer the one in the bag.

Dinner - Japanese Style Fried Rice + Just Egg + side of air-fried spring rolls.

Trader Joe’s Japanese Style Fried Rice is tasty & easy to make. I like adding Just Egg to it to make it more filling. For the side, I air-fried some spring rolls. We found a vegan-friendly box of spring rolls at Costco quite a while ago which has been great.

Dessert - Jolly Lama’s Vanilla Fudge Sundae Cone

These are our favorite vegan ice cream cones hands down! We find them at Sprouts.


Sunday, December 20

Breakfast - Korean Pears

This morning a lot was happening so we were only able to eat some fruit for breakfast. You can find these at your local Korean market!

Lunch - Falafel Salad

We made up for breakfast by having a big lunch. First off we added spring mix + spinach to a bowl. Topped off our greens with couscous, kalamata olives, Miyoko’s Fresh Vegan Mozz, dollops of Hummus + Tahini, & lastly 4 falafels each.

Dinner - Panera Bread’s You Pick Two - Sandwich and Soup.

We ordered their 10 vegetable soup (not pictured) & their Mediterranean veggie sandwich with no feta, subbed the bread for their black pepper Focaccia bread which is vegan friendly! I didn’t have the energy to cook this day so that’s when fast food vegan options help.


Snack - Pomegranates & Movie Theather Popcorn

My mom gifted us a bag of pomegranates so I de seeded a couple as a snack while we watched the new Vir Das special on Netflix. They were so ripe n juicy.

We also had some microwaveable popcorn. SkinnyPop’s Microwave Butter Popcorn is vegan friendly! It satisfies that movie theater popcorn craving.


Monday, December 21

Lunch - Instant Pho from Costco

We found this instant pho at Costco. It’s great to have on hand when A) you’re not in the mood to cook or B) too hungry to wait for food or C) still full but need to eat your next meal.

Dinner - Couscous Salad + Vegan Chicken.

For the base, I added spring mix + spinach to a bowl, then mixed Red Wine Vinegar, olive oil + salt n’ pepper to the greens until well combined. I added some leftover couscous into the bowls & mixed that with the greens. Then added half a can of garbanzo beans to each bowl. Topped with some kalamata olives & a diced original Morning Star Farms chick’n patties (one for each bowl). Lastly a big dollop of hummus!

Snack - A couple of pomegranates.

We will not let any of these go to waste & they're the perfect tv snack.


Tuesday, December 22

Breakfast - A smoothie bowl from Robek’s Juice

Our go-to order is their Nutty Acai bowl. To veganize it, ask for no bee pollen & substitute the honey for agave. I usually add extra toppings of strawberries & blueberries to mine. Fahim adds Mango & strawberries to his bowl. This time they didn’t give me the right toppings but that’s okay.

Snack - Kashi’s Chewy Granola Bar Chocolate Almond Sea Salt flavor.

We had to drive an hour out for an appointment of mine so we had a snack since we had to eat a late lunch. We found these bars at Costco but when we can’t find them there we get them at Grocery Outlet their our go-to granola bar.

Lunch - Vegan By El Zamorano in Costa Mesa

We finally got to try Vegan By El Zamorano in Costa Mesa! It’s as amazing as it looks & is officially our new favorite restaurant for vegan Mexican food.

This was our order

(2) al pastor tacos, (2) asada tacos, (2) chorizo tacos , (2) pollo (chicken) tacos

(1) chile relleno burrito

(1) Cali Burrito (I asked for no beans so that my stomach wouldn’t be TOO mad at me …IBS problems)

(1) Agua de Horchata

Everything was AMAZING!!! Highly recommend getting as much as you can its SO worth it. We ate the tacos in the car. This was the first day I ate “spicy” food in 2 weeks because my doctor had me on a restricted diet to help with some stomach issues I was having. It was technically a week on Wednesday but 13 days is long enough… hehe.

Dinner - We split the chile relleno burrito

I haven’t had a ~proper~ chile relleno for over 6 years. I haven’t attempted to make a vegan one because I was in search of the right cheese for the filling. I did have a vegan chile relleno in Las Vegas when we lived there for a year but it didn’t fulfill my craving, it just wasn’t like the classic one my mama makes. Anyway, my expectations were high & they didn’t disappoint me one bit.


Wednesday, December 23

Breakfast - Oatmeal with almond butter & chocolate chips.

I wanted a breakfast that would help our stomachs ~digest~ after the feast we had on Tuesday. Oats are now one of my go-to breakfasts, it’s super simple. Usually, I add peanut butter but we ran out so I used almond butter. I personally prefer peanut butter on this because it tastes like a peanut butter cup oatmeal. Fahim says he likes it better with almond butter. Both are delicious.

Lunch - We split the Cali burrito from El Zamorano

Dinner - Vegan Tamales

My sweet mama made us a bag full of vegan tamales. She made them with masa from a small family-owned Mexican market we’ve been going to since I was a kid. For the filling, she used homemade mole rojo, jalapeño slices, potato slices & soy chorizo on some & Gardein’s Chick’n Strips on the others.
