It’s been a journey, but I’m so excited to be back and reintroduce myself and Veganize That Plate. If you're reading this email, you might remember my newsletter throughout 2021 and 2022, "What We Eat in a Week". You can look back at past episodes here. I paused it to focus on building my website, which I remained online until late 2023. Unfortunately, a combination of health challenges and a sudden, devastating loss of my site forced me to take a step back.
This past year, I focused heavily on my health — finally receiving long-overdue diagnoses of PCOS and endometriosis, along with addressing other hurdles. It’s been a transformative time, filled with both challenges and triumphs, and I’m grateful to be in a better place now.
Throughout this time, cooking has remained my constant through everything. It’s not just a passion of mine — it’s also been instrumental in managing my health. Now, with renewed energy and excitement, I’m ready to share my recipes with you again. Thank you for being here — I hope you’re as excited as I am to dive back in!
Starting this week, I will be sharing detailed posts and recipes each week. This time it'll be a bit different than before — you'll receive individual posts about each meal and a full list of ingredients about 1-2x a week. This will be delivered to your email directly and will remain free of charge.
